Over the summer, I switched over to the Simply Filling Plan on my Weight Watchers diet. I've been on Weight Watchers for a couple of years now and was just ready for a change. I actually really like this plan better...and I've been more consistent with the weight loss, too. The only thing is that it can be a bit limiting with options...and some of my faves (barbecue anything) aren't on plan (no sugar, y'all...that can be a bummer to BBQ Sauce). So, I've been playing around for awhile and combined a few standard homemade barbecue sauce recipes to make a great sauce that is the perfect fix! I use it on everything...chicken, pork, beef...all the meats, y'all. Check out the recipe below.

I think my *favorite* way to use this sauce is over chicken breasts. I'll pour some of the sauce over the chicken and leave it in the refrigerator for a bit before throwing them on the grill. Then during grilling, I baste a bit more.  

I do like to add a little extra Stevia to mine. I'm a big fan of The Salt Lick (I'm from Austin...can't help it!), and love their sweet barbecue sauce. While I know this one is not that sauce...the sweetness at least brings me a bit closer to it. 

Oh and where I've added "minced" to the recipe, be sure to mince as fine as possible. As crazy as this sounds, I throw my onion and garlic in the Ninja blender for just a second or two to get them as fine as possible. But don't blender them too long...you'll wind up with onion/garlic smoothie. Niiiiiiice.

Ingredients:
  • 1 yellow onion, finely minced
  • 1 tablespoon olive oil
  • 5 cloves of garlic, minced
  • 1 tablespoon soy sauce
  • 1/2 teaspoon cornstarch
  • 2 teaspoons dry mustard
  • 1 teaspoon cumin
  • 1 teaspoon Italian seasoning
  • heaping tablespoon chili powder
  • 6 ounce can tomato paste
  • 2 cups beef broth
  • 3 tablespoons apple cider vinegar
  • Stevia to taste (I use 2 teaspoons)
Sauté your onion in the oil over medium-high heat for 5 minutes until soft and translucent. Turn heat to medium and add garlic, soy sauce, cornstarch, dry mustard, cumin, Italian seasoning, and chili powder. Stir to combine and slightly cook over the heat. Add in tomato paste, beef broth, apple cider vinegar, and stevia. Stir to combine. Allow to simmer over low heat for 30 minutes. 

Freezes well.

This makes a a good size batch...but I often double it so I can freeze some for later.
 I just love sauce...and always have it on hand to grill something up.
