Brownies are one of those things I really prefer homemade on (okay, I do have that one jazzed-up boxed mix recipe on here...but you know, other than that...). I also need a really thick brownie...none of this 1/2 inch brownie-business. I can only use an 8-inch pan to produce 1 1/2-inch brownie perfection. Adding peppermint only elevates the awesome. And I love using my essential oils to bake with. Adding a few drops of Peppermint makes these totally ahhhhhh-mazing. I think they would also be yummy with Orange Oil, too (not both...just to be clear. One or the other. Wink.). I can't speak for other brands, but both Peppermint and Orange Essential Oils from Young Living are consumable...I know not all brands are, so use caution if you're using a different brand.

Seriously, big ol' brownie perfection, y'all. Flat brownies are all kinds of jealous of these bad boys. Both the combination of a little more baking powder than usual, a smaller pan, and a bit of extra baking time make these the perfect height.

Double Chocolate Peppermint Brownies


Ingredients:
  • 3/4 cup coconut oil 
  • 1 1/2 cups sugar
  • 1 1/2 tsp vanilla extract
  • 4 drops Young Living Peppermint Essential Oil
  • 3 eggs
  • 3/4 cup flour
  • 1/3 cup + 3 tbsp unsweetened cocoa powder
  • 1 tsp baking powder
  • 1/4 tsp salt
  • 1/2 cup dark chocolate chips
Directions:
Preheat oven to 350 degrees. Line an 8x8 pan with parchment paper or aluminum
foil that has been sprayed with nonstick cooking spray. Combine oil, sugar, vanilla 
extract, and peppermint oil in large bowl. Add in eggs, one at a time, mixing after 
each one. 
Make sure mixture is entirely combined.
Combine flour, cocoa powder, baking powder, and salt in medium bowl. Slowly
add dry mixture to wet mixture until completely combined (don’t overmix).
Fold in dark chocolate chips.
Pour batter into prepared pan. Bake for 35 minutes, or until an inserted toothpick
comes out clean. 

Allow to cool completely before cutting into squares or rectangles.

  2. I love the taste of chocolate and peppermint (think Peppermint Patties) when they are combined. Theses brownies sound so very good to me and my taste buds are already asking for a couple of them.

  3. Double chocolate anything is good but add mint in with it and sounds amazing to me. I love to bake and brownies are a favorite in our house so I will be trying these.
