These Cherry Almond Sweetheart Scones are perfect for Valentine's breakfast.
Whip them up for all of your special valentines!
These were not difficult to make, either. If you've never made homemade scones before, this would be a great recipe to start with. It's super simple and pretty much fool-proof.
- 2 cups sifted, all-purpose flour
- 3 tablespoons baking powder
- 3 tablespoons sugar
- 1/4 teaspoon sea salt
- 1 stick salted, cold butter
- 1 (10 ounce) jar of Maraschino Cherries, (drained, but juice reserved)
- 1 cup heavy cream + 2 tablespoons, divided
- 1 cup white chocolate chips
- 1 cup white chocolate chips
Directions:
Preheat oven to 400 degrees.
Drain jar of cherries and set aside the juice. Chop the cherries into halves.
In the bowl of a food processor, combine flour, baking powder, sugar, and salt. Pulse just until blended. Cut in pats of the cold butter and process until mixture is crumbly, but not over-mixed (the butter pieces should be the size of small peas). Pour mixture into large bowl and fold in cherries and almond extract. Make a small well in the middle of the mixture and pour in heavy cream. Mix just until ingredients are combined.
In the bowl of a food processor, combine flour, baking powder, sugar, and salt. Pulse just until blended. Cut in pats of the cold butter and process until mixture is crumbly, but not over-mixed (the butter pieces should be the size of small peas). Pour mixture into large bowl and fold in cherries and almond extract. Make a small well in the middle of the mixture and pour in heavy cream. Mix just until ingredients are combined.
Turn out dough onto floured surface and form a circle, with dough being about 1/2" thick. Cut hearts out with a cookie cutter. Take remaining 2 tablespoons of cream, add a splash of cherry juice (but save the rest for the final glaze) and brush over scones. Place scones on a parchment-lined baking sheet.
Bake for 15-18 minutes, checking for doneness.
While scones are cooling, melt your white chocolate chips in a microwave according to package directions. Stir in two tablespoons of the reserved cherry juice (this tints the glaze pink!). Drizzle over scones.
