This Avocado and Tuna Salad Wrap is the perfect way to
stay on track and still have something delicious and satisfying.
I've been on my healthy eating plan for 18 months now...it's slow going, but that also means I will keep the weight off. I had a bit of a backslide during the holidays, but I'm back on track now. I made this Avocado and Tuna Salad Wrap for lunch the other day and loved it...and it worked perfectly for my plan. Check out the recipe below.
I've always been a tuna salad fan. And an avocado fan, too. Not sure why I didn't think to combine the two until now. I didn't have to use as much mayonnaise and the avocado added lots of healthy goodness to the classic salad.
The Bumble Bee® Chunk Light Tuna I used for this was delicious. Available in can or pouch, each Bumble Bee® product is an easy and delicious way to add a variety of nutrients to your diet, including lean protein, healthy fat, and important vitamins and minerals.
Avocado and Tuna Salad Wrap
Ingredients:
- 1 medium avocado
- lemon wedge
- 1 (5 oz.) can Bumble Bee® Chunk Light Tuna in Water {drained}
- 1 stalk celery, chopped
- 2 green onions, chopped
- 1/3 cup grape tomatoes, quartered
- 1 tablespoon low fat mayonnaise
- salt and pepper, to taste
- salt free seasoning, to taste
- 2 whole wheat tortillas
- 2 green leaf lettuce leaves {optionals}
Remove avocado seed and spoon avocado out of its shell into a medium bowl. Squeeze lemon wedge over avocado and mix in. Add in tuna and mix. Add celery, green onions, grape tomatoes, and mayonnaise. Season to taste and mix completely.
Lay lettuce onto tortillas and divide avocado tuna salad between tortillas. Roll up and slice. Serves two.

Add celery, green onions, grape tomatoes, and mayonnaise. Season to taste and mix completely.

This is super simple but really delicious. My son and I enjoyed these for a quick lunch the other day. It fueled us up before a big afternoon of errands. And they fit in perfectly with my food plan. No guilt...yay!
