For as long as I can remember, my mom has made a couple of apple and honey cakes around the holidays. She never makes them for anything specific, just to have on hand for snacking or giving to neighbors or friends who may stop by. I've been playing around with her recipe and decided to try it with pears. I played with the spices, too, and thought Cardamom would be a really nice addition. Plus, I think Cardamom seems a bit holiday-ish {is it just me?}. I also used the most luscious and yummy honey in this cake. It's from Don Victor and it contains the actual honeycomb in the jar {my kids loved that!}. See the recipe below.

I loved that pretty honey comb so much that I cut it into pieces and served it as a garnish with the cake. I just think it's so fun to look at...all drippy and sweet with all that honey oozing out!

The honey was easy to work with and went into the cake so well...it tasted so delicious!

Holiday Honey and Pear Cake


Ingredients:

Cake:
  • 3 cups Anjou Pears, chopped {no need to peel}
  • 1 cup chopped pecans
  • 2 teaspoons vanilla extract
  • 1 teaspoon ground Cardamom
  • 1/2 teaspoon ground cinnamon
  • 1/2 teaspoon ginger
  • 3 cups all-purpose flour, sifted
  • 1 teaspoon Kosher salt
  • 1 teaspoon baking soda
  • 1 1/2 cups granulated sugar
  • 1/2 cup Don Victor Honey
  • 1 cup vegetable oil
  • 3 eggs
Glaze:
  • 1 cup sifted powdered sugar
  • 2 tablespoons Don Victor Honey
  • 1-3 tablespoons milk or cream {depending on how thick you'd like your glaze}
Directions:
Combine chopped pears, pecans, vanilla, and spices in a bowl. In another bowl, combine flour, baking soda, and salt. Cream together sugar, honey, oil, and eggs in a large bowl. Add the dry ingredients to this, a little at a time. Mix just until incorporated. Fold in pear mixture until incorporated.
Spray a bundt pan with nonstick spray {I use the kind for baking}. Pour batter into pan {it is a thicker batter...you may have to use a spoon or rubber spatula}. 
Bake in a preheated 325 degree oven for one hour and 20 minutes {you may want to start checking it for doneness around one hour}. Cool in pan and then invert onto cake plate.
Prepare glaze by whisking together powdered sugar and honey. Add your milk or cream a little at a time until you achieve your desired consistency.
Spoon glaze over cake and serve. It's yummy for both dessert or a lovely Christmas brunch!

I was also excited to get some happy mail with these delicious whipped honeys, also from Don Victor. They're so luscious and spreadable. I think my fave is the caramel, but they were all quite delicious and decadent. I'm having a luncheon at my house on Friday and will be serving these alongside some butter cookies. My youngest already enjoyed the caramel flavored one on his morning toast...he loved it!
