I think I've told you guys how I had a brief stint as a Southern Living at Home gal. I didn't make much money at it {read: I actually spent more than I made...meaning it actually cost me to have the gig. My husband was beyond thrilled when I hung up the Southern Living hat.}. But that little adventure led me to owning almost every Southern Living Cookbook that's ever been written. True story.

The original recipe for this came out of the Christmas with Southern Living 2004 Cookbook. LOL...I have them all the way through 2007 when I gave the "job" up...starting with some from the 1970s. Gah. I may have a problem. 

I honestly need to cull down my collection...especially these ding dang Christmas ones. They have these planners in the back that indicate that holiday baking should be started around the beginning of November {implying if you're just cracking the book open on, say December 11th, you don't stand a chance of having a decent repertoire of Christmas cookies that year}. They make my holiday self-talk take a nose-dive with how unprepared for it all I really am. 

I digress.

Even with the crazy amounts of butter...this is a good candy/cookie-ish recipe to have in your arsenal. It's painfully easy. And requires very little prep work and just a few ingredients. And it doesn't contain flour. Measuring out flour is the bane of my existence. Sometimes it's just too much effort for this girl. How sad is that?

Christmas Cracker Candy Recipe


Ingredients:

  • 2 sleeves Ritz crackers {76 crackers}, broken in halves and fourths
  • 3/4 cup butter
  • 3/4 cup firmly packed light brown sugar
  • 2 cups milk chocolate chips
  • 3/4 cup chopped pecans
  • 1 cup white chocolate chips

Directions:

  • Arrange cracker pieces on a lightly greased jellyroll pan lined with foil. 
  • Bring butter and brown sugar to a boil in a small saucepan. 
  • Stir constantly. Cook 3 minutes and immediately pour on top of crackers.
  • Bake in a preheated 350 degree oven for 5 minutes. Turn off oven. 
  • Slide rack a little bit out of oven and sprinkle chocolate chips on top of mixture. 
  • Slide back into oven, close oven door, and leave pan in for about 3 minutes, until chocolate melts. 
  • Pull pan back out of oven.
  • Using a butter knife, spread chocolate all over crackers. 
  • Top with pecans and white chocolate chips. 
  • Cool completely and break into pieces. 
  • Store in refrigerator.
