Pumpkin Cinnamon Cookies

These Pumpkin Cinnamon Cookies were based off of my friend, Amanda's, world-renowned chocolate chip cookies. I can't believe I didn't think to do this sooner. Because they are...AMAZING. These Pumpkin Cinnamon Cookies will be your new go-to fall treat!
Cinnamon Cookies

So, Amanda makes chocolate chip cookies that are incredible. I first tasted them on a church retreat about ten years ago. And by that time, she was already famous for them (okay, just in our circles...but you know what I mean). She went on to selling the dough for these every year around the holidays to all of us so we could each get our fix. Funny, before Amanda's cookies, I had always sworn I wouldn't ever love a chocolate chip cookie that didn't have pecans in it (I'm southern...we put pecans in errrrry-thing, y'all). But then, I had Amanda's cookies and they won me over. 

Someone finally convinced her to put the cookie recipe in our church class cookbook. While I'm not 100% sure Amanda would still be my friend if I posted that recipe here...I finally took the plunge and put my own spin on these in the form of Pumpkin Cinnamon Cookies. I seriously have no idea why I didn't do this sooner. The fall flavors in this cookie are like cookie nirvana, y'all. And although it has oats, it's definitely not an oatmeal-tasting cookie. Fall Cookies

One of the reasons these Pumpkin Cinnamon Cookies are so fallish (and yummy) is these cinnamon chips that I'm so enamored with lately (remember the Pumpkin Cinnamon Chip Oatmeal Bars?). Here's what they look like, if you're in search of them:

Hershey's Cinnamon Chips
In Texas, I grab them at HEB. But, these cinnamon chips are now available on Amazon HERE. But, full disclosure...they're insanely addictive.

Pumpkin Cinnamon Cookies Recipes

Ingredients:

  • 2 1/4 cups all-purpose flour
  • 1 cup old-fashioned oats (not instant)
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • 1 teaspoon pumpkin pie spice
  • 1/2 cup unsalted butter, softened
  • 3/4 cup pure pumpkin (can use canned)
  • 1/4 cup white sugar
  • 3/4 cup packed light brown sugar
  • 1 small box instant vanilla pudding
  • 1 teaspoon vanilla extract
  • 2 large eggs
  • 1 (10 oz) bag cinnamon chips

Directions:
In a small bowl, combine flour, oats, baking soda, salt, and pumpkin pie spice. Set aside. 
In a large bowl, combine softened butter, pumpkin, sugars, pudding mix (just use the powdered mix...do not add anything to it or make the actual pudding), and vanilla extract. Beat until creamy. Beat in eggs.

Gradually add in flour mixture. Gently fold in cinnamon chips. Do not over mix!

Drop by rounded, heaping, teaspoonfuls onto parchment-paper lined baking sheets. Bake at 375 for 10 minutes. 

Makes about three dozen cookies. 

Pumpkin Pudding Cookies
The unique texture and fluffiness of these Pumpkin Cinnamon Cookies is also what makes them pretty incredible. They are a bit rounded on top...but yet chunky and filled with awesome!

Seriously...go out and getcha some cinnamon chips ASAP! You will thank me later. Although, don't hate me when you have to pull out the fat pants. These cookies have those kind of powers.

  4. These hunks of love... Oh my word! I would eat the whole batch, make a second batch, eat that all too and then suffer a massive stomach ache and not even care because it was so worth it! LOL!
