Southwest Corn Dip

This Southwest Corn Dip is a mouthful of flavor and yum. Perfect party food.

Southwest Corn Dip: a super easy crowd-pleaser with lots of yum!
This recipe and I go back a few years to my Muleshoe, Texas days. I learned more about cooking by living in a small town for four years than any other chunk of my life. This recipe was originally from a lady at church who always made it for Sunday evening sandwich suppers that we often had. It was always the first empty bowl. I've tweaked it a bit to my own tastes over the years...but it is still that familiar yumminess.

It's like summertime's comfort food. Just good.

Grab the above ingredients and let's whip this up!

Combine cream cheese, sour cream and cheddar cheese. Blend with mixer until completely combined. Fold in corn, chiles {drained as much as possible}, green onions and chopped jalapenos {you can alter the amount of jalapeno based on your heat preference...sometimes I just omit it}. Sprinkle lightly with smoked paprika, if desired. Serve with veggie or corn chips.

Don't make this too far ahead of time or the green onion flavor will take over.
