Lemonade Ice Box Pie

This easy no-bake pie will quickly become your favorite dessert recipe, because of its simplicity and amazing flavor. It's a four ingredient, no-bake dream!

Lemonade Ice Box Pie: only four ingredients and a few hours in the fridge are needed for a no-bake dessert that tastes like you worked on it all day.

I'm really surprised that I haven't shared this recipe with you yet. It's one of my favorites, and it's quite lovely...especially in the summertime. The recipe was given to me by my college roommate's mom, Sheila. Sheila treated us very well back in our college days and would leave these in our apartment refrigerator whenever she was in town. They were gone in a flash...eventually she started leaving two. And then she gave us the recipe {perhaps it was hard to keep up with the sweet tooths of the four nineteen year-old girls in that apartment}. Over the years, this recipe has become very high on the list and is fixed often. I think of Sheila, and her daughter, my sweet friend, Misty, every time I whip one up. 

Lemonade Ice Box Pie Ingredients
It doesn't get much easier than this, does it? I suppose you could make your own graham cracker crust...but sometimes it's just easier to not reinvent the wheel {and instead just pick one up on aisle three of the supermarket}. Can I get an amen?

- 1 {9-inch} graham cracker pie crust
- 1 {8-ounce} container of whipped topping
- 1 {14-ounce} can of sweetened condensed milk
- 1 packet of Crystal Light lemonade mix {2 quart size}, do not mix with water, you’ll just need the powder

Combine whipped topping, sweetened condensed milk and lemonade powder. Mix well until mixture is dense and completely incorporated {it is okay to lose the texture of the whipped topping, you want it mixed really well}. This is sometimes a hard concept to wrap our brains around...when using a whipping cream type of ingredient, it is ingrained in us to not over-mix it, because the light and fluffiness aspect gets lost with that. This is just the opposite...you do not want it to retain the texture of the whipped topping. Mix until your heart's content, my friend. It actually has a bit of a shininess to it when it is completely mixed...that's always my sign that I'm done mixing.
Pour into the graham cracker crust. Refrigerate overnight. Slice and serve.
