Let me just start out by saying, I love me some Coffee-mate. It's added a little something special to my morning cup(s) of coffee for years. Check out this yummy new flavor they've added>>>

    Lately, I've been addicted to the Sugar Free Italian Sweet Creme creamer...it's only one point on my Weight Watchers' plan for THREE tablespoons! That's pretty awesome! And it tastes fantastic!

    Besides adding Coffee-mate to my cup of joe, I also enjoy coming up with recipes to use it in. Below are the fluffiest, yummiest waffles you'll ever wrap your lips around. And you can even change up the flavor by switching out to different Coffee-mate creamers! YUM!



    Ingredients>>>
    2 eggs, separated
    ½ cup Coffee-mate Creamer, your flavor preference {although, Italian Sweet Creme Waffles are my FAVE}
    1½ cups milk
    3 tablespoons sugar 
    3 tablespoons butter, melted
    1¾ cups flour
    2 teaspoons baking powder

    Directions>>> Combine egg yolks, creamer, milk, and sugar. Whisk until the mixture is a light creamy yellow. Combine flour and baking powder. Add flour mixture into milk mixture. Stir 
    gently, just until combined. Stir butter in slowly, to prevent the eggs from scrambling.

    In a separate bowl: beat egg whites until stiff peaks form. Carefully fold egg whites into 
    batter, but try not to break the egg white structure, as it adds to the fluffiness of the
    waffles.

    Scoop batter, about 1/3 cup per waffle into heated and greased waffle iron.


    Makes 8 waffles.
