This no-bake pumpkin pie has three layers of fabulousness!
It would be the perfect addition to your holiday dessert table.
I love a good no-bake pie. This one is a tried and true recipe that I tweaked with some delicious seasonal creamer from my friends at Coffee-mate...it took it to a whole new level of AWESOME! Coffee-mate is a wonderful addition to seasonally-inspired recipes. Check more of them out here or here.
THIS POST IS JUST GETTING STARTED!
Every year, from September through December, I skip-a-dee-doo-dah around the dairy area of the grocery store singing "it's the most wonderful time of the year". Just kidding. Kind of. It is the time of yeamy coffee is taken to a new level of amazing by Coffee-mate's seasonal flavors. My usual vanilla takes a back seat to my annual Pumpkin Spice creamer or this new Spiced Latte creamer {seriously, it's so good}. It's flavor, spice and everything nice for your holidays. Coffee-mate Spiced Latte creamer is the best way to warm up any day. Other seasonal flavors include Eggnog Latte, Peppermint Mocha and New Dark Chocolate Fudge.

Here's how this Mile High, Three Layer Pumpkin Pie comes together:
The crust is made of three simple ingredients:
- 1 stick of unsalted butter
- 1 tablespoon of sugar
- a package and a half of graham crackers {about 28 squares}
Pulse the graham crackers in a food processor until they are fine crumbs. Add sugar and pulse a bit more. Melt the butter and add to the food processor. Mix and scrape the crumbs from the sides of the bowl. Mix again and pour contents into a pie plate. Press the crumbs up the sides of the plate {I like to use the back of the spoon...it seems to work pretty well}. Bake at 300 for 10 minutes. Allow to cool completely.
The pie filling is made of these ingredients:
- 1 {8 oz.} block of cream cheese {softened}
- 2 tbsp. sugar
- 3 cups whipped topping
- 1 cup Coffee-mate Pumpkin Spice creamer
- 2 packages {3.9 ounce size} instant French vanilla pudding/pie filling
- 2 cups pumpkin {can use canned}
- 1 tsp. cinnamon
- 1 tsp. pumpkin pie spice
- 2 cups whipped topping
Combine softened cream cheese, 2 tbsp. Pumpkin Spice creamer, sugar, and 3 cups whipped topping. Beat until well mixed. Spread evenly on pie crust.
Combine 1 cup Pumpkin Spice creamer and both packages of pudding mix. Beat well. Add pumpkin, cinnamon and pumpkin pie spice and mix thoroughly. Spread the pumpkin-pudding mixture on top of the cream cheese layer in the pie. {Pie dish will start getting quite full...no worries, just keep going.} Spread last 2 cups of whipped topping on top of pumpkin-pudding layer. Dust with cinnamon, if desired.

ReplyDeleteSorry for the delay in my reply! I refrigerate it overnight. But, I think a couple of hours so the pudding sets up sufficiently should do the trick. Since it's instant pudding, it shouldn't take too terribly long. Happy Turkey Time...{fingers crossed that this one wins!} Thanks bunches for stopping by!
