Today, my darling friend, Julie, from Redhead Can Decorate is here to share some deliciousness for your holiday tables. This pie is classic, but definitely unique. And it will be the star of your Thanksgiving dessert spread.

I'm back today with Kristi to share one of our Thanksgiving traditions:
Cranberry Pecan Pie.

Just look how pretty the cranberries look on the pie.
They kind of remind me of hollies, or red Christmas bulbs. Just so beautiful when baked in with the gorgeous pecans.

It's like they were meant to be together.

Cranberry Pecan Pie Recipe
About 10 years ago I was listening to Emeril Lagasse on the Food Network. I think it was a Thanksgiving special.
He mentioned throwing in 1 cup of fresh cranberries into a pecan pie. Immediately, I thought it sounded good and I made a mental note.

The sweet nutty-ness of the pecan pie, mixed with tart cranberries was a sure winner. I have never made a pecan pie with out cranberries since. As a matter of fact, we just finished off the pie you see in the photos last night. My hubby said he dreamed about it all day at work!

I hope you try it (my recipe includes a no roll easy pie crust too)!

Helpful Hints

For the pecan pie part, I always get the recipe off of the Karo Syrup bottle. Then I use my own crust, and add the fresh cranberries right before I bake it.

Easy Pie Crust

Cranberry Pecan Pie Recipe

Ingredients:

  • 1 cup Karo Light Corn Syrup
  • 3 eggs
  • 1 cup sugar
  • 2 tbsp. melted butter
  • 1 tsp. vanilla
  • 1 1/2 cups pecans -not chopped (6 oz.)
  • 1 cup fresh, raw rinsed cranberries (they are found in the produce section in a bag usually)
  • whipped topping
  • 1 unbaked pie crust (click here for my easy flaky recipe)


Directions:

  • Preheat oven to 350 degrees. 
  • After your pie crust is ready, mix first 5 ingredients together in a medium bowl. 
  • Add whole pecans and mix. 
  • Add cranberries and mix. 
  • Pour into unbaked pie crust. 
  • Help some of the cranberries to the top of the filling so they will be seen after it's baked. 
  • Bake 70 minutes, and let cool for 2 hours. 
  • Serve with a dollop or 2 of whipped topping.
