School Lunch Ideas: Going Beyond the Sandwich

As we head back in to the hustle and bustle of school time, thinking about healthier lunch packing can be a little overwhelming. Here's a neat system that makes putting a healthy lunch together for your kids a cinch. I also wanted to share some fun ideas to send along with the kiddos that aren't sandwiches...because my youngest won't touch a sandwich with a ten-foot pole. {And we can't be the only family with "one of those"!}

I was happy to see that my local Target had a great selection of the new Rubbermaid LunchBlox kits. I've actually had their Sandwich Kit for over a year now. I also picked up the Entree Kit to give it a try along with some Jif Peanut Butter and Smucker's Strawberry Spread {in the squeezy bottle...for fun!}.

My kids love taking breakfast for lunch! Such a fun twist on their midday break. And these Jif To Go containers are perfect for my youngest who likes to dip his banana in his peanut butter.

Pizza Bread is always a hit with our lunch bunch. I bake it either the night before or morning of...but they love cold pizza {which is how it is at lunch time after being in their boxes with the Blue Ice all day}. Shown above is the entree sized kit of the Rubbermaid LunchBlox. I've really enjoyed this particular set...especially since my older son enjoys salad quite a bit.

Here's a quick fix idea: prepare muffins on the weekend to store in your freezer for busy mornings when lunch making time is rushed. Pop them in the box and they thaw in time for lunch. These muffins have all of the yumminess of a PB&J sandwich tucked into a friendly little muffin.

I used both Jif Peanut Butter and Smucker's Strawberry Spread to make these babies. Click here for my recipe. Once you make freezer muffins for your kids' lunches, you'll use them all the time {promise}! They're such a great time-saver.

  11. Ok, I am completely sold. We looked at these in Target the other day (I was sad to not write a post about these but HAD to check them out anyway!) but the Husband didn't think they were a good idea. I think he's wrong. I am going back to buy them and just printed the coupons. :)
    Also, girl your lunch box notes are SO precious. Gosh I have such a long way to go w/ printables. They are adorable!
