Strawberry Lemonade Poke Cake

I used my mom's tried and true Jell-o Poke Cake recipe and gave it a fresh summery spin. All of the flavors of the perfect summer drink soaked right into a cake.

I think the original Jell-o Poke Cake was invented in the seventies...about the time I was born. It was a potluck staple at every church gathering I can remember growing up. My mom made it at least once a month. I used the new Cool Whip frosting on this one and added some summery fun as well, with the strawberry lemonade flavor. It's perfection this time of the year.

I just used a lemon box mix for this, but gave it my "faux made" spin by substituting the milk for the water, the butter for the oil {x2} and adding an additional egg. To make it even easier, just follow the actual directions on the box. I'm awesome at over-complicating things.

You'll need:
  • 1 box of lemon cake mix
  • ingredients to prepare the cake {as listed on the box or as I mentioned above}
  • 1 small box of strawberry flavored Jell-o
  • 1 cup of water {used to prepare the Jell-o}
  • 1 cup of lemonade {prepared}
  • 1 container of Cool Whip Frosting {vanilla flavored}
  • sliced strawberries for topping {optional}
Prepare your cake mix by the box directions {or do it my over-complicated way, as described above}. Bake in a 9x13 pan and allow to cool completely.

Using a wooden skewer, poke holes all over cake...making sure to reach the skewer all the way to the bottom of the pan.The more holes the merrier.

Prepare the Jell-o {use the cup of water to boil and then the one cup of lemonade, still cold}. Pour the Jell-o all over the cake, allowing it to seep into the cake through the holes.

Refrigerate overnight. Frost with Cool Whip frosting and top with sliced strawberries, if desired.

I pretty much put this photo in just to show you what a clean cut of cake I got out of the pan. Bragging rights, people. This *never* happens around here. It's usually dig in and pray for the best.

  13. I really like the idea of putting sliced strawberries on top. It makes the be done poke cake look fancy, like you bought it from the store. :D And I think the lemon flavored base would help with the strong taste of the strawberries.
