Glazed Caramel Macchiato Muffins

The doughnut muffin obsession continues. 
And creamer-incorporated-into-a-recipe obsession, as well. Today, I bring you these 
Glazed Caramel Macchiato Muffins in all their glazed-doughnutty-glory.

Once again, I took my basic recipe for the Cowboy Muffins
and put a spin on it with a flavored creamer in place of the milk.

This time...Caramel Macchiato was up to bat.
And he did not disappoint his fans.

 And a little glaze dunk made these AHHHHHH-Mazing.

To make these, you'll need:
  • 1/2 cup sugar
  • 1/3 cup shortening
  • 1 egg
  • 1 1/2 cups all-purpose flour
  • 2 tsp baking powder
  • 1/2 tsp salt
  • 3/4 cup Caramel Macchiato International Delight Creamer
  • 1/2 cup powdered sugar
  • 1-2 tablespoons Caramel Macchiato International Delight Creamer
In mixing bowl, cream together first 1/2 cup sugar, shortening and egg. In a separate bowl, combine flour, baking powder and salt. Add the flour mixture and the creamer alternately to the sugar/shortening/egg mixture, beating well.
Fill 12 prepared muffin cups 2/3 full. Bake at 350 for 20 to 23 minutes or until done. Combine remaining powdered sugar and creamer to make the glaze. While muffins are still warm from the oven, submerge muffin tops in glaze. For extra sweetness, allow glaze to harden and then repeat for another layer of glaze.
