Hot Bacon & Swiss Dip {with low carb option} #dip, #appetizer

Need an easy crowd-pleasing party food? I'm always on the look out for easy dip recipes {that taste amazing}. This Hot Bacon & Swiss dip recipe will put a smile on the face of everyone who tastes it. AND...it can also be easily modified if you'd like the low carbs version.

I first met this dip during the holidays when my friend, Alison, brought it to an ornament exchange party and changed all of our lives for the better. Then, last month, my friend Jill brought it to our Hot Glue Hotties craft night. I finally jumped in with both feet and made this for our Super Bowl party. It's one of those dishes that there's never a bite left when the evening's done.

You'll need {and just fyi, the photos from this were from when I made a double batch}:
  • 1 8oz block of cream cheese
  • 1 cup of mayo
  • 1 cup of grated swiss cheese
  • 1/2 bunch of chopped green onions
  • 1/2 lb of bacon, cooked and crumbled 
    • {just FYI: I substituted with the real bacon pieces that are found in the salad topping area of the grocery store...not Bacon Bits, the real bacon crumbles. I used three bags for this double batch. I just didn't want my whole house to smell like fried bacon when I had company coming over. It still tasted fantastic.}
  • Crumbled Ritz crackers for topping*
    • *{If you'd like to make a low carb version of this, you can substitute crumbled pork rinds for the topping...you could even cook them in a little butter for the buttery cracker flavor the Ritz crackers provide.}
I prefer to use a block cheese and grate it myself for a creamier dip.

And I love a good dip with green onions.

Combine the cream cheese, mayo, swiss cheese and green onions. 

Spread into a casserole dish {I made a double batch, so you'll probably just need an 8x8 dish}.
I didn't spray my pan ahead of time...I figured with all that greasy mayonaise, nothing would stick to this baby. I was right on the money. ;)

Top with crumbled bacon.

I love these new cracker stacks from Ritz...I crumpled right in the bag and it was easy.
For the double batch, I used three of these mini sleeves for the topping.

Spread your crackers over the top.
Bake at 350 for 20 minutes.

Serve hot with crackers.
I have to add...I made this for our Super Bowl get-together and I had a husband ask his wife to make sure to get the recipe. So, it's the perfect food. Not only did all of the girls at the previous two events I mentioned eat every bit of this...the guys at our party last night loved it, too.
{BTW, I used those half cracker/half pretzel "crackers" and they were the perfect texture for this dip}
For low carbers, serve with veggies or make your own low carb tortilla chips out of low carb tortillas.

  2. I make this exact dip except I add Captain Rodney's glaze to the top-oh my gosh you have to try it! The glaze can be hard to find but I have had luck finding it at Publix. It's like a red pepper jelly glaze and it just really makes this dip!
