{Guest Post: Allison from PrepDish} Gluten-Free BBQ Beef Meatballs



Hi, I’m Allison with Prep Dish. I am a personal chef in Austin, Texas. This means I go into my clients’ homes once a week and cook their meals for the week. I’m not a private chef (living in the client’s home and prepping the food each day). Instead, I visit multiple clients each week and am skilled at prepping food ahead of time (for both my clients and myself!). Having meals ready and waiting in the fridge eliminates mealtime stress (and the temptation to dial in pizza!). 

This recipe is one of my faves. It’s a (bit healthier) spin on the meatballs I had growing up in Kansas. I love preparing it for clients as it’s always a hit with kids! I like prepping it at home, because I can double the recipe and keep extras in the freezer for one of those, “I have nothing to eat!” nights. 

I have 2 ingredients that I add to make these meatballs extra juicy & delicious. 

1. Almonds: I use almond flour in place of breadcrumbs. I make my own; simply place 1 cup of almonds in a blender or food processor and blend on high.
If your ground almonds are looking like this, keep blending! You want them to reach a gritty sand-like texture, similar to this photo: 

Finished whole almond flour, I like the slight crunch this gives to the meatballs! 

You can always used purchased almond flour, instead: 
This flour doesn’t use the almond skin, thus the lighter color. 

2. Zucchini: Grated zucchini helps prevent dry meatballs! 

Here’s the recipe: 

Gluten-Free BBQ Beef Meatballs
Yield: 16 servings

Ingredients: 
  • 1¼ ground beef (local, organic, grassfed preferred) 
  • 1 grated zucchini (or 2 small)
  • 1 tsp fresh ground pepper
  • 1 T chili powder
  • 1 T cumin powder
  • 1 tsp garlic powder
  • ¾ cup ground almonds or almond flour
  • 2 eggs
  • ½ cup + 2 Tbsp BBQ sauce (if gluten-free, read label for gluten-free sauce, I use Organicville)
Preparation: 
  • Preheat your oven to 350 degrees F.  Spray a 9x13” baking pan with nonstick spray. 
  • Place beef, seasonings and 2 Tbsp BBQ sauce in a large mixing bowl.  Stir until well combined (this works best using your hands).  Add eggs and then almond flour, mixing until all ingredients are evenly incorporated. 
  • Place rounded meatballs onto prepared baking pan.  Top with BBQ sauce. 
  • Bake for ~30 minutes or until just cooked through.
