Party Food: Easy Tortilla Roll-Ups {with a low-carb option}

 
I've made these easy appetizers for years. I constantly change up the recipe, based on what is in the pantry at the time or what I'm in the mood for. But this is the basic recipe. It's super easy and can be made the night before. The recipe makes LOTS, too.

You'll Need {low carb options noted in red}:
  • 1 package of large {burrito-style} tortillas, 10 count {for the low carb version, use the low carb tortillas...I used both the regular and wheat low carb tortillas for this recipe...you'll need more than 10 since the tortillas are significantly smaller}
  • 2 blocks of cream cheese, softened {for the low carb version, use the 1/3 less fat variety}
  • 1 {7 oz.} can green chiles
  • 1 small can chopped olives
  • 1/4 cup salsa
  • 1 cup shredded cheddar cheese
  • 1 tablespoon chili powder
  • 1 tablespoon paprika {I use the smoked variety, which is fantastic}

I throw everything {except the tortillas} in my food processor and pulse it a few times around until it's smooth.

 Spread a layer of the filling in the middle of the tortilla.
Try to leave a good size border so the filling doesn't leak out once rolled.

Roll the tortilla tightly, but mindful to keep the filling in place.
{The larger tortillas are much easier to work with...but I need to use the low carb ones!}

Wrap rolled tortillas in plastic wrap and refrigerate overnight or for at least four hours.
Remove from plastic wrap and slice the rolls every 1 1/2 inches to form your "pinwheels".

Serve & enjoy!
If I'm getting super fancy on ya, I'll plate them on their side {they're laying flat in the above pic} topped with a jumbo-sized black olive and skewered with a toothpick.
