Ay-yi-yi. These Pumpkin and Pecan Blondies are a little slice of heaven.
I now think I love blondies more than brownies (gasp!).
My kids have already taken these in their lunches twice and are begging for another batch. They're so simple to make...I may just have to oblige!
Pumpkin and Pecan Blondies
Ingredients:
- 1/2 cup butter, softened
- 1/2 cup white sugar
- 1/4 cup packed brown sugar
- 1 large egg
- 1/2 cup pure pumpkin (can use canned...I did!)
- 1 teaspoon vanilla
- 3/4 cup all-purpose flour
- 1 teaspoon pumpkin pie spice
- 1/2 teaspoon baking powder
- 1/2 teaspoon salt
- 1/2 cup chopped pecans
Directions:
Cream together butter and sugars until fluffy. Add egg, pumpkin, and vanilla and mix well. In a separate bowl, sift together flour, pumpkin pie spice, baking powder and salt. Add this dry mixture to the wet mixture and mix just until incorporated. Fold in chopped pecans.
Pour into a foil-lined 8x8 pan (you can spray it with cooking spray to ensure these won't stick). Bake at 350 for 30-40 minutes, checking for doneness. Edges will be lightly browned.

Such a nice little fall treat. I love them with a cup of coffee...and a good book!
Have you started baking this fall? Cooler temperatures always make me want to bake the day away. Of course, here in Texas, I basically just have to crank the A/C down and do a lil' pretending. That's okay...it still feels nice and fallish inside, especially with these Pumpkin and Pecan Blondies baking in the oven. Happy Pumpkin Season ('m already well into the double digits as to how many cans I've gone through)!
