Easy Chocolate Grasshopper Parfaits | A delicious, deconstructed take on the traditional Grasshopper Pie
Growing up, my mom always made Grasshopper Pie during the spring. It was perfect for St. Patrick's Day...or just welcoming warmer weather, in general. With its yummy creme de menthe, flavor, it was so fresh and delicious. I thought it would be fun to take these new Nestle Toll House DelightFulls Dark Chocolate Morsels with Mint Filling and make a deconstructed Grasshopper Pie...in the form of a parfait! These morsels really take this treat to the next level. I mixed them into the mint pudding layer, along with topping the entire treat with them. Check out the recipe below.

These parfaits are both fluffy and creamy at the same time. The combination of mint and chocolate make them so delicious.

The Nestle Toll House DelightFulls come in four varieties: Caramel Filling, Peanut Butter Filling, Cherry Filling, and the ones I used here, the Mint. I'm a huge fan of mint, so I wanted to try the mint first. Plus it was perfect for a fun grasshopper dish. Hilariously, my youngest son can't not call it "Cricket Pie". Every. Time.

DelightFulls Filled Baking Morsels are slightly larger than a regular morsel, and allow you to put a special twist on traditional recipes like a cookie or a brownie, or open up a variety of new fun recipes to try! The DelightFulls filled morsels hold their shape when they bake, and can be used whole, cut in half, or coarsely chopped for a surprising delight of flavor and color in a baked good (not to mention popping them in your mouth right out of the bag!)

Grasshopper Parfaits

Ingredients:

- 1 (4 serving size) box chocolate instant pudding/pie filling (plus ingredients needed to prepare for pudding)
- 2 cups heavy whipping cream
- 1/4 cup powdered sugar
- 1/4 teaspoon mint extract
- 5 drops green food coloring
- 1 cup DelightFulls Dark Chocolate Morsels with Mint Filling
- 12 chocolate sandwich cookies, crushed
- 1/3 cup DelightFulls Dark Chocolate Morsels with Mint Filling

Make chocolate pudding according to package directions, but do not allow to set up. Use half of the pudding to fill four glasses or mason jars. Refrigerate, briefly, while making the mint fluff.

Beat whipping cream on high with an electric mixer just until stiff peaks begin to form. Add in mint extract and gently sift in powdered sugar and mix a bit more. Fold in one cup of DelightFulls Dark Chocolate Morsels with Mint Filling. Top pudding in the glasses with half of the mint fluff mixture. Sprinkle with crushed chocolate sandwich cookies. Top each glass with the rest of the pudding, then the rest of the mint fluff. Sprinkle with the 1/3 cup of DelightFulls Dark Chocolate Morsels with Mint Filling.
