Easy Overnight Blueberry French Toast

So who's excited that Spring officially starts tomorrow? After the rough Winter that so many people have endured it's finally time to start thinking about warmer days, Spring
cleaning activities and maybe even an Easter brunch menu.

Whenever we have company in town for a holiday {and sometimes even when we don't}, I like to prepare a breakfast casserole the night before so that I can just pop it in the oven the next morning and then it's ready to go. This Overnight Blueberry French Toast Casserole is so easy and it's a perfect complement to other savory breakfast dishes.

I have to tell you this is so delicious that it really doesn't need any syrup but you can always add that with the whipped cream and blueberries when serving if you would like.

Speaking from experience, this is also great warmed up later with a little scoop of vanilla ice cream as a dessert. ;)
The Husband's favorite is blueberry but you could even use seedless strawberry or raspberry jam and fruit instead. All sorts of options with this one.

Recipe: Easy Overnight Blueberry French Toast

Ingredients

  • 1 cup blueberry jam or preserves (or your favorite seedless flavor)
  • 16 oz package French bread, cut into 11⁄2-inch cubes
  • 8 oz package cream cheese cut into 1-inch cubes
  • 1/2 cup fresh blueberries, plus more for garnish
  • 6 large eggs
  • 2 1/2 cups milk
  • 1 teaspoon ground cinnamon
  • 1 teaspoon vanilla extract
  • 1⁄2 cup packed light brown sugar
  • Syrup, whipped cream and blueberries for topping if desired

Instructions

  1. Heat jam in a small saucepan over low heat until melted and smooth, stirring often.
  2. Place half of bread in a 13x9-inch baking dish coated with cooking spray.
  3. Top with cream cheese cubes and 1/2 cup fresh blueberries.
  4. Drizzle the melted jam evenly over the top.
  5. Top with remaining bread cubes.
  6. Whisk together eggs, milk, cinnamon and vanilla.
  7. Pour the egg mixture evenly over the casserole and sprinkle with brown sugar.
  8. Cover and chill at least 8 hours or up to 24 hours.
  9. Preheat oven to 325 degrees.
  10. Bake covered 20 minutes.
  11. Uncover and bake 15 minutes longer or until center is set.
  12. When serving, drizzle with a little syrup, whipped cream and fresh blueberries if desired.

  2. I make overnight french casseroles often, but have never thought to add cream cheese to them! Ummmm... why have I never thought to do that?? ;) LOVE this recipe, Claire. It will definitely be made soon in my house.

  3. This sounds so delicious, Claire! I'm loving the idea of double-duty for breakfast and dessert too. Pretty sure I could find any great excuse to eat this with plenty of cream, be it whipped or ice cream. Yummy!
