This recipe has been tweaked and perfected over the years. And I'm loving the latest spin I put on it this time! The chicken tasted amazing since it was sautéed in the new Land O'Lakes Sauté Express

This is the perfect solution to those evenings when you're running kids {or yourself} around and don't have a whole lot of time to cook a meal. 

The flavor was taken to a whole new lever of creamy, cheesy awesomeness because of the Sauté Express starter. Really cool product!

I found the Garlic & Herb flavor of the Sauté Express in the dairy area of my Walmart. There were several flavors...all look super delicious. Each rectangle of it was for half a pound of chicken. Since I used a whole pound in this recipe, two worked out perfectly. 

For this recipe, you'll need>>>

- 2 squares Land O’Lakes Garlic & Herb Sauté Express
- 1 pound chicken breasts, chopped into bite-size chunks
- 1 onion, chopped
- 1 {14.5 oz} can diced tomatoes, Italian style
- 1 box frozen chopped spinach, thawed
- 8 oz. rigatoni pasta, cooked
- 1 {8 oz.} tub chive n’ onion flavored cream cheese
- 2 cups shredded Mozzarella cheese

Melt 2 squares of Land O’Lakes Garlic & Herb Sauté Express in skillet over medium-high heat. Add onion and chicken pieces and saute until chicken is cooked through and juices have reduced, almost completely. Add in tomatoes and spinach and mix completely. Remove pan from heat. Fold in pasta and cream cheese and gently mix. Spoon into a prepared casserole dish. Top with shredded mozzarella and cover.

Bake at 350 for 15 minutes. Remove cover and bake for an additional 15 minutes, until cheese is melted and bubbly.


This is a great kid-friendly dish, too. My kids even eat the spinach without compaints. Winner, winner chicken dinner! {wink}

  18. I don't normally make comments on blogs I find through Pinterest, but I wanted to say I've made this exact meal for years and my husband has dubbed it "Epic Bake", because he loves it. I never thought to try flavored butter when cooking the chicken though. I'll have to give it a try!
