Slow Cooker Peperoncini Pot #Roast

Looking for a slow cooker recipe that will knock your socks off? This is the ultimate slow cooker pot roast...the perfect comfort food to come home to on a busy day. The peperoncini peppers take it to a level of pot roast perfection...not spicy, just a kick of fabulousness.

My mother-in-law has a very similar recipe to this...she calls it Italian Roast and she serves it on big crusty rolls. It's amazing. Recently, I came across a similar recipe on Pinterest over at Low Carb Crock. I decided to tweak both recipes and come up with my own version {not that either recipe had a thing wrong with them...I just wanted to put my own spin on things}.

You'll need:
  • 3-4 pound boneless chuck roast
  • olive oil
  • 16 ounce jar of peperoncini peppers {with juice}
  • 1 head of garlic
  • kosher salt and a salt-free blend {I adore TJ's 21 Seasoning Salute}

Swirl some olive oil around your slow cooker and add your washed and patted-dry roast. {Optional: if you'd like a nice crust on your roast, feel free to sear it in a pan before adding to slow cooker...I was lazy and didn't do that this time}.

Peel all of your garlic cloves {yes, I really used the whole head...it's delicious that way}. Chop the cloves in half. Pierce your roast and insert cloves into the piercings. Flip the roast over and do the same on the other side...using up all the garlic.

I seriously can't get enough of this stuff. After I sprinkle my roast with Kosher salt, I sprinkle a little {okay...a lot} of my Trader Joe's 21 Seasoning Salute on it. If you've never had the pleasure of tasting this amazingness, get on it! I use it on scrambled eggs, chicken, pork and obviously, beef. It's the first salt-free seasoning that I've ever been this enamored with. Mmmm.

Now pour the whole bottle of peperoncinis on top of the roast...juice and all. Cover with lid and cook on low for at least eight hours. Your house will smell incredible all day.

My husband called me while I was at my kids' practice to tell me he sneaked a taste. He told me he had fallen in love with me all over again. Of course he did.

Annnnnd, I used the soft & yummy garlic cloves from this in my mashed cauliflower dish {a mashed "faux-tato" dish, if you please}. It was perfection.

As I mentioned above, my mother-in-law serves hers on rolls. Since we do low carb, I served this with the cauliflower mash, as I mentioned above. And my kids had carrots and mac & cheese with theirs. They devoured it. The peppers aren't a spicy pepper {puh-lease, I can't even handle Taco Bell Mild Sauce}, I can even eat these whole when they're cooked like this.

Take my word for it, this is one incredible roast. It makes people like you. A lot.

    1. You know...it's one of those "non-recipe" dishes that I usually throw together. I steam a head of cauliflower, then run in through the food processor with butter and cream cheese...and I used those softened garlic heads from this recipe. It's super yummy!

  5. Oh the deliciousness!! This looks so-good! I love a good pot roast. Usually I cook mine in the oven, but I'm starting to have a love affair with my slow cooker. It's amazing. We've been having crock-pot Sundays. I just might have to add this to my list of Sunday meals.
